it is all opensource
but you will have to make some modifications to fit your fitpc and maybe you will want to replace cm730 with some other board that runs the same arm7 cpu

can i build a replicate to a darwin, using my own fit pc, and cm730, and my own camera.

is it possible to use all the software platform that darwin op use?
