However I also happen to be a camera freak.

Before I can answer that you must give me the following
1. What is your budget ? 500GBP, 1000GBP, 1500GBP
2. What kind of quality are you after ? i.e. can you tell the difference in pixel size, noise and colour ?

I can tell the difference is, the pixel can determined the size of Image,noise means sound, colours are a function of biology and light.

Canon vs Nikon

I personally have a Canon 60D. I like it because it feels good in my hand.

However if money is no issues.

I would get a Nikon D800 or D7000 (cheaper). Nikon because it is best suited for indoor low light shooting. You will need two sets of lens a zoom like 70-200 2.8F and a normal 28-60mm 2.8F. A flash.

If you really like Canon then you can try the Canon 5D Mark 3 and the same kind of lens.

This should be quite a lot of money already. Well you didn't specify your budget :P
